Let's Get Baked: Spicy Disco Sausage Traybake

Welcome to Let's Get Baked. Autumn traybakes where the oven does the work and the seasoning does the talking. Rosie makes them, Neil says the words, you eat them.

This one is the banger. Sausages, cherry tomatoes, courgettes and butter beans, roasted with a generous spoonful or three of Spicy Disco Mix. The beans go in with their liquid near the end and turn it into something you want bread for.

Serves four. Ten minutes to put together, forty in the oven.

Ingredients

 

  • 8 good pork sausages
  • 400g cherry tomatoes
  • 2 courgettes, cut into thick half moons
  • 1 red onion, cut into wedges
  • 1 x 400g tin butter beans, not drained
  • 3 tbsp olive oil
  • 2 to 3 tbsp Spicy Disco Mix
  • Salt

Method

 

  1. Heat the oven to 200C fan.
  2. Tip the tomatoes, courgettes and onion into a large roasting tin. Add the olive oil and the Spicy Disco Mix and toss everything until it is coated.
  3. Lay the sausages on top. Roast for 25 minutes.
  4. Take the tin out, turn the sausages, and pour in the butter beans with their liquid. Give it a stir so the beans sit in the juices.
  5. Back in the oven for 15 minutes, until the sausages are browned and the beans have thickened the sauce.
  6. Taste for salt. Serve with bread, or on a jacket potato with salted butter.
