Rodeo Disco Pickles

There’s a disco in your mouth and everyone’s invited. Rodeo Disco is aptly named because of the colourful mix of spices we use to flavour them, these party pickles are sliced in thinner rounds and are a bit more delicate, almost floral, in taste. Seasoned with pink peppercorns, coriander seeds, mustard, dill and nigella seeds to create a punchy, well-balanced flavour. So get on your dancing shoes - Five, six, seven, ATE. 

Seasoned with pink peppercorns, coriander seeds, mustard, dill and nigella seeds, Rodeo Disco pickles have a wonderful balance making them both punchy and tangy without being overpowering. There’s a hint of sugar in the brine to balance out the acidity in the vinegar, but they are very much not a sweet pickle.

We mix cabbage, onions, carrots, ginger, garlic and gochugaru in huge batches, ferment it, dehydrate it down and mix it with beautiful Cornish Sea Salt. Put it on everything you normally sprinkle salt onto and change your life for the better. Go on, do it. We’re waiting. 

Use instead of salt on everything and anything. Adds a spicy, umami hit to your cheese toasties, panfried pigeon or your ramen.
