Ingredients
-Generous handful of sliced cherry toms
-A medium cucumber (you can peel and deseed if you want it to feel fancier)
-A block of feta cubed
-Lots of kalamata olives
-1tbsp red wine vinegar
-5 tbsp really good extra virgin olive oil
-Sumac sliced onions
-Fresh mint
Directions
Slice your cherry toms & a medium cucumber (you can peel and deseed if you want it to feel fancier).
Add a block of feta, cubed and lots of kalamata olives in a big bowl.
Add a tbsp red wine vinegar and about 5 tbsp really good extra virgin olive oil.
Toss until the feta gets a bit crumbly and then serve topped with lots of pickled onions and fresh mint.
