French Toast + Pickled Onions

Golden, buttery brioche, plenty of melted cheddar and a generous spoonful of sharp, crunchy pickled onions. This is French toast with a little Goat Rodeo attitude.


The richness of the cheesy brioche is exactly why pickles exist in this world - cutting through with brightness, tang and just the right amount of bite. A proper comfort-food sandwich that's equally at home as a lazy brunch, quick lunch or slightly indulgent supper.

Ingredients

3 eggs 

100ml whole milk

1 tsp wholegrain mustard 

Flaky sea salt

Cracked black pepper


4 slices brioche 

100g mature cheddar, grated


25g butter

4 tbsp pickled onions

Directions


Whisk the eggs briefly with the milk, mustard power and seasoning in a shallow bowl.


Heat the butter in a frying pan until just foaming, then dip two slices of brioche in the milk on both sides.


 Brown in the frying pan for a couple of minutes on each side, then add a handful of the cheese onto one piece of bread. 


Cover the pan with a lid and cook for about two minutes, until the cheese has fully melted, then place the other slice on top. Serve with a generous spoonful of pickled onions.
