Ingredients

  • 650gchicken breast, sliced into small pieces
  • 2eggs, beaten
  • 100gwhite breadcrumbs
  • 1 tsppaprika
  • Cracked black pepper
  • Sunflower or rapeseed oil for frying, enough to fill a small saucepan 2 - 3 inches deep
  • 2 tbsppickled onion salt
  • Your favourite pickles, to top

Method

  1. Heat the oil over a low flame until it reads 190 C on a thermometer, or test with a small piece of bread - it should turn golden in about ten seconds.
  2. Put the breadcrumbs in a shallow bowl and mix the paprika through, then season generously with cracked black pepper.
  3. While the oil is heating, dip the first piece of chicken in the egg and then in the breadcrumb mix, until fully coated. Transfer into the oil with a slotted spoon when the oil is ready and fry for 5 - 7 minutes, until a deep golden colour all over. Repeat with all the chicken, setting aside in a bowl lined with kitchen towel to absorb any excess oil.
  4. Sprinkle with pickle onion salt (2 tbsp is just a guideline!) and top with your favourite pickles.
