Quick Cook Cowboy Air Fryer Gnocchi Recipe

Cowboys love sausages, eggs and err… gnocchi (perhaps they were Italian cowboys..?!). Anyway, never mind the cowboys, WE love sausages, eggs and gnocchi! Especially when it is this quick and easy, and we cooked it in air-fryer no less (I wonder if Italian cowboys use air fryers?)

air fryer gnocchi recipe

This is absolutely perfect midweek scran material. It’s low cost, low effort but mighty in flavour.

I have only just started using an air fryer and still figuring it out a bit, these little

For this recipe I picked some rocket leaves out of the polytunnel- they taste so good they only needed a wee bit of oil, salt, and pep to dress them, but honestly you can use any salad and any dressing here.

Ingredients

  • 500gGnocchi
  • 80gGrated Parmesan
  • 1 TBSPBBQ Rodeo Rub
  • 1Bag or Bowl of Salad Leaves
  • Olive Oil
  • Salt + Pep
  • 4Sausages
  • 2Eggs
  • 2Big Spoons of Greek Yoghurt
  • Hot Sauce (optional)
  • Air Fryer

Method

  1. Pop your sausages in the air fryer @ 190c for 15-20 minutes until golden brown (shake half way through)
  2. Chuck your gnocchi, grated parmesan, BBQ rodeo rub and a good glue of olive oil in a bowl and mic together with a spoon until all fully coated. Add more olive oil if you need to.
  3. Line your air frier basket, put the coated gnocchi in and cook at 180c for 15 minutes (shake halfway through). If you like them crispy, add an extra 5 minutes on.
  4. Whist these are both cooking with air fryer magical sourcery, drizzle a wee bit of olive oil, salt and pepper over you salad, mix together and load up on to your plates. Add a dollop of greek yoghurt on your plate too.
  5. Heat the oil in a pan, get this super hot before cracking your eggs in to fry for crispy fried eggs.
  6. Finish loading your plates with the Cowboy BBQ Rodeo Gnocchi, sausages and a crispy fried egg.
  7. Optional: I also added a bit of hot sauce over the yoghurt and fried egg. Becuase I am almost certain that's what my fictional sexy Italian gnocchi loving, air fryer using, cowboy would do.
