One for the low-effort, high-reward days. Minimal movement required, maximum toastie satisfaction. Pickled onions doing the heavy lifting, as always.

Ingredients
-4 slices good sourdough bread
-100g butter, softened
-125g ball mozzarella, grated
-100g mature cheddar, grated
-Salt and pepper
-4 tbsp Sumac Pickled Onions
Directions
Lightly toast all the slices of bread, then butter both sides of each slice of toast, copiously. Heat a frying pan on a medium flame for a minute or two until hot.
Place two slices of toast in the pan and cook for 3 minutes, until nicely golden and beginning to really brown. Scatter half the mozzarella and half the cheddar on one of the slices of toast. Top with 2 tbsp of pickled onions, season and then add the second slice of toast - golden side face down into the cheese.
Cook for 3 minutes with a lid on the frying pan, then flip the toastie over and cook for another 3 minutes or so, until the cheese is really gooey and melted.
Repeat with the remaining ingredients!
