Salty B*tch Pico De Gallo

Our kimchi salt is your tomato's best friend. The natural form of MSG in tomatoes pairs beautifully with the umami of the kimchi salt, making this a pairing greater than the sum of its parts.


This is essentially a Mexican tomato salsa you can play with by adding peach, mango, or roasted red peppers. The Goat Rodeo Goods Salty B*tch Kimchi salt gives such a fab power boost to the flavours in it, but regular salt can work too!

Ingredients

  • 1 small brown onion, diced super finely
  • 1 Jalapeno, seeds removed, diced super finely
  • 3 large fat, ripe and juicy on the vine tomatoes or about 12 cherry tomatoes, diced
  • Juice of one lime
  • Finely chopped coriander
  • 2 teaspoon Salty B*tch Kimchi salt (substitute for standard sea salt)

Directions

  1. Mix the finely diced onion, jalapeno, lime juice, and kimchi salt in a bowl and let it marinate for 5 minutes.
  2. Add the diced tomatoes, chopped coriander, and any optional extras. Mix it all in with salt, pepper, and lime juice as needed. Leave to mingle for at least 10-15 minutes

  3. Eat with tacos or straight on your favourite tortilla crisps.
